Standish's journey into winemaking began early, learning vine pruning techniques from his grandfather at the age of six. After studying chemical engineering, he immersed himself in the world of wine, guided by mentors and inspired by visits to renowned wineries in France's Rhône Valley. His quest for excellence led him to establish The Standish Wine Co in 1999, focusing on showcasing the distinct terroirs of the Barossa region.
In the vineyard, Standish prioritises rigorous control over factors like yield and vine health, believing that the quality of fruit is paramount. He meticulously manages bud numbers and employs organic and biodynamic practices to ensure optimal grape development. By limiting yields and employing careful pruning techniques, he aims to achieve perfect tannin ripeness and balanced acidity.
Standish's winemaking philosophy emphasizes minimal intervention, with wines being foot-trodden, naturally fermented, and bottled unfiltered and unfined. He carefully selects barrels, often declassifying some to enhance complexity, and employs a range of fermentation and aging techniques to showcase each vintage's unique characteristics.
His wines, characterized by their charismatic expression of Barossa fruit, have garnered attention for their power, grace, and distinctiveness. Despite challenges such as reduced yields in recent years, Standish remains steadfast in his pursuit of perfection, producing wines that stand among Australia's finest.
