These parcels were selected from the Bottelary Hills, in collaboration with Rick's and our old friend Carl van der Merwe, who is chief winemaker at DeMorgenzon. Hand-picked from the weathered granite soils. The wine was wild yeast fermented in stainless steel and drawn-off into concrete tanks, stainless steel and seasoned barriques before being aged for a further 12 months and then bottled (without filtration). It has a nod to the Northern Rhone for sure, some smoky bacon and black pepper, savoury and meaty are the main descriptors so think Crozes Hermitage. It's also bright and fresh with smoky notes and lovely berry and plum fruit with just a hint of integrated oak. Worked brilliantly with some charcoal grilled chicken tikka skewers this evening !
