Wine is made from Georgias's indigenous grape variety – Saperavi, which is hand harvested from the Kakheti Region (East Georgia). Wine undergoes 7-10 days of fermentation on skins. Once fermentation is complete, skins are removed from the wine. 50,000 bottles were produced.
Saperavi is often compared to Malbec, Cabernet Franc and even Gamay depending on how it is made. The 2021 vintage however is possibly in Mencia territory – a strikingly deep purple colour, bright and juicy with fresh crunchy dark berry flavours, firm grippy tannins and perfectly balanced acidity.
