Fattoria Selvapiana is owned by Francesco Giuntini, a descendant of Michele Giuntini, who purchased the estate in 1827. It is now run by his adopted son, Federico Giuntini Masseti, born on the estate, along with his sister Silvia. Located northeast of Florence in the small Rufina zone of Chianti, Selvapiana has 31 hectares of Frantoio olives. Rufina is Tuscany’s coolest olive oil area, producing greener, spicier oils.
Selvapiana Extra Virgin Olive Oil is made mainly from Frantoio olives grown at 250–300 metres in the cool Sieve Valley. Harvested while still green, the olives produce a spicy, herbaceous oil typical of this high-quality, cool-climate region.
This Extra Virgin olive oil is vivid green in colour with excellent viscosity. Its aromas are fresh and clean, with notes of artichoke, freshly cut grass and green tomatoes. On the palate, the oil is ripe and viscous, displaying purity and intensity, with a spicy, peppery finish.
