Pago de Los Capellanes are a winery based in and famous for their excellent Ribera del Duero wines.The grapes are all picked by hand using 15kg crates. After destemming, they undergo a cold maceration at below 8ºc to obtain the maximum expression of fruit. They are then pressed at low temperature and the must racked to remove the gross lees. This is then fermented using selected yeast for 14 days at a controlled temperature in stainless steel vats. After fermentation, the wine is kept on its fine lees for 3 months to gain richness, body and aromatic power, using battonage to circulate the fine lees, after which it naturally settles and clarifies.
White peach, pear, lime, floral notes with hints of acacia too. Crisp and fresh initially with lovely lime and stone fruit - typical of Godello, leading to a tangy quite weighty mid-palate, some spice and a creamy textural finish.
