This is a delicious new wine to us from Etna in Sicily. Perfumed with peachy fruit, rich and nutty on the palate with fresh stone fruits, spice and an almost creamy texture, - long and toasty. Very interesting and complex white.
Made with 95% Carricante and 5% Minnella grown on the volcanic soils of Etna, some 600 metres above sea level. Pressed gently after 24 hours of cold maceration, slow fermentation and the wines spends c4 months in steel tanks with regular lees stirring (batonnage). Would be good with sushi, sashimi, vegetable tempura, fish risotto etc.
