A medium - full bodied red wine with silky tannins. There are notes of new leather, ample candied strawberries and black raspberry. This wine is a great match to game, meat with sauce, exotic dishes, pies and mild cheeses. This wine can be drunk now but it will also improve by ageing it for 5-7 years.
The vineyard is a total of 9-12 hectares. The soils are made up of a variety of sand, clay and limestone. The wine making is traditional with each variety (Grenache, Syrah, Mourvèdre) vinified separately. The grapes are destemmed and then yeast is added. There are 30 days of fermenting with several lots of stirring of the lees. The wine is then aged in concrete tanks.
