‘Simeta’ is a single-vineyard Arcos from 55-year-old vines on limestone and sandy soils with a high iron content on the southern side of the Penya Foradà mountain (the one exception to his north-facing vineyard rule). 100% whole bunch in the ferment and 18 months spent ageing in oak foudres and then clay amphorae has produced a wine with a core of supple cherry and cranberry fruit, complemented by complex herbal notes of tea leaves, thyme and rosemary, with hints of white pepper and finely structured tannins.
The grapes were hand harvested and fermented as 100% whole bunches in concrete tanks using indigenous yeasts. Maceration lasted for approximately 28 days before the wine was gently pressed and transferred back to concrete for malolactic fermentation. It was then matured for 12 months in a large oak foudre, followed by a further six months' ageing in clay amphorae, enhancing both texture and complexity while preserving the purity of the fruit.
