Even though this is a single vineyard wine, it is, in fact, made from 30 separate components. While Merlot and Cabernet Franc can play a part in Cyril’s make-up, the 2019 vintage is pure Cabernet Sauvignon. The Cyril vineyard is 14km south of the winery, in a higher, cooler and wetter spot. The soils here tend to offer up redder flavours than those in slightly warmer areas, and it suits Cyril down to a tee in 2019. This is an amazingly refined wine with a thrilling perfume and superbly pure fruit. It is a red light sabre of purity, and while it is a shame that yields were pinched in 2019, this wine is one of the most slender and direct Cyrils I have tasted, and I adore its balance and poise.

First made in 1978, this is an utterly beguiling vintage of this single-vineyard Cabernet, with terrific expression of variety, sub-region and terroir. Ripe but sinuous, lissom even; the blackcurrant, blackberry and mulberry fruit is scented with violets, lilac and garrigue herbs, plus delicate notes of tobacco, coffee and walnut cake and cedar. Graphite tannins strike an elegant note. Lovely detail, freshness and finesse, with luminosity and dreamy languor to the lingering finish.

Very fragrant ripe Cabernet. High toned. Fermented blackcurrant pastilles. Quite a charge of fine, ripe tannins underneath but even now the impression is of a smooth, concentrated wine. Definitely one for the table.
