Made from a single vineyard situated 300 metres above sea level and caressed by the cooling sea breezes from the Atlantic a few kilometres away. Rainwater is retained in the iron-rich clay and cobble soils which results in low yield and flavour concentration.
Winemaking & Maturation 40% of the bunches were left whole to enhance aromatic complexity, structure, and lift. Fermentation was conducted with gentle punch-downs to extract colour and tannin without overextraction. Maturation took place over 11 months in French oak barriques, 20% of which were new.
Tasting Notes Aromas of wild strawberry, cranberry, and rose petal are layered with hints of forest floor and subtle oak spice. The palate is finely textured, with silky tannins and bright acidity framing a core of pure red fruit. Poised and graceful, our wine lingers with a long, mineral-driven finish.
