Situated on the southerly slopes, our parcels are exposed to the cool sea breezes ensuring slow and extended grape ripening. The sandstone soils induce low to moderate vigour which results in low yields but flavour concentration.
Winemaking & Maturation The grapes were handpicked and moved to our cool room overnight. 40% was left whole bunch and the grapes were left soaking for 4 days. Spontaneous fer- mentation happened in open-top tanks and the wine was matured for 11 months, using 30% new French oak barrels.
Tasting Notes Light ruby. Rose and cherry with raspberry. Light bodied, crunchy and fresh with more bright red fruit on the palate. A grippy, saline and moreish finish. Lengthy and refined. Drink now or keep for up to 8 more years
