Made from a single vineyard situated 300 metres above sea level and caressed by the cooling sea breezes from the Atlantic a few kilometres away. Rainwater is retained in the iron-rich clay and cobble soils which results in low yield and flavour concentration.
Winemaking & Maturation
The grapes were gently whole-bunch pressed. Fermentation proceeded spontaneously with indigenous yeasts, followed by partial malolactic conversion. The wine remained on full lees for several months. After careful maturation, the wine was blended and bottled without fining to preserve its natural purity and finesse.
Tasting Notes
Our chardonnay opens with vibrant aromas of ripe white peach, citrus blossom, and subtle hints of toasted almond. On the palate, it offers a balanced structure, combining fresh acidity with a creamy texture and delicate mineral nuances.
