"The entry-level red has grown, and in 2021 it was redefined to a more traditional Manchuela blend fermented with 100% full clusters with short macerations and matured in tinaja. For the 2022 Fundamentalista, they found more traditional old vineyards that are usually co-planted with Bobal and Moravia Agria, Rojal, Tortosí, Trepadell and other varieties, and they used concrete for the fermentation and most of the élevage. It has a very clean and expressive nose, focused, serious and elegant. It has a medium-bodied palate with moderate ripeness and alcohol (13%), fine tannins, an elegant, juicy but serious mouthfeel and a long, dry and tasty finish. It's very drinkable, fresh and tasty. All the varieties were hand-picked simultaneously and transported to the winery where they were foot treaded. The grapes were cofermented using indigenous yeasts in stainless-steel, with 40% whole bunches adding lift and a short 8-10 day maceration adding structure. The wine was matured for 8 months in a mix of 1000 litre clay amphorae and stainless-steel tanks before bottling without fining or filtration.
This new 2023 really is a delicious wine, floral, aromatic and juicy, fresh with a lovely soft almost creamy finish. Serve cool and its wonderfully vibrant and great with a whole range of tapas dishes. Made by the extremely talented Javi Revert
