The base wine is the same as Franciacorta Brut - 85% Chardonnay and 15% Pinot Noir. After harvesting the grapes are fermented in stainless steel. Then, to differentiate it from the Brut, the wine ages for an additional 6 months on lees (so around 28 months in total), and at disgorgement no sugar is added for dosage. The wine then spends at least further 24 months in bottle, post-disgorgement, before release.
A lovely, toasty, rich style. Aromas of ripe citrus with hints of chamomile. Fresh acidity and red apple characters on the palate, finely textured, with appealing minerality and a long toasty almost creamy finish. Fresh too, clean and beautifully balanced,
