The ‘Kavalieros’ is a single-vineyard Assyrtiko from 60-year-old vines in Imerovigli. It demonstrates the depth and longevity that Assyrtiko can achieve, offering layered fruit, chalky texture, and remarkable energy.
Grapes were rigorously sorted by hand on a conveyor belt before whole bunches were gently but slowly pressed. Fermentation took place in stainless-steel tanks under controlled temperatures. The wine was aged on its lees for 18 months in tank, with bâtonnage carried out more regularly during the first months and as required for the remainder of the ageing period.
Pale lemon in colour. The nose is complex and expressive, showing a combination of citrus aromas, primarily lemon and orange, alongside mineral notes. Similar flavours carry through to the palate, supported by high acidity and a robust structure. The wine is balanced, with a long finish.
