Absolutely delicious, bright, fresh, juicy Saumur Champigny that almost leaps out of the glass at you.
Caroline and Hervé take a minimalist intervention approach in the winery. Sourced from four different parcels of Cabernet Franc, the grapes for this are hand-harvested and are then transferred into vats by gravity, where they undergo a short maceration for three days. Fermentation takes place in stainless steel and the blend is aged for a further five months in stainless steel before bottling.
Have had this several times now, with various foods and it's just a thrilling glass of wine. Deep colour, floral with black cherry, raspberry and just a hint of herb on the nose. Crunchy and vibrant on the palate, a wonderfully pure expression of ripe Cabernet Franc.
