Stony terraced vineyards on alluvions and molasse facing full south. Yields are low at 30 hl/ha.The grapes are 100% hand-picked and carefully selected for ripeness. After crushing and destemming, fermentation relies solely on wild yeasts, lasting 15 days with the cap punched down twice daily for color and tannin extraction. The wine ages 60% in vats and 40% in 2–4-year-old demi-muids.
"The 2023 Gigondas Les Hauts De Montmirail is cut from the same cloth yet brings a touch more Syrah character in its darker berries, peppery herbs, graphite, and crushed stone-like aromatics. It's full-bodied, concentrated, has remarkable purity, and a gorgeous finish. This cuvée is 50% Grenache, 30% Syrah, and the rest Mourvèdre that’s from higher elevation, terraced parcels. It was destemmed and aged in 50% new French oak casks." 96pts Jeb Dunnuck jebdunnuck.com
