Les Prunes is a white wine produced from the red skinned Mandó grape from the same vineyards as used in Safra which is harvested early to enitice the fresh and delicate Mediterranean style flavours.
Soft pressing and cold fermentation of the free run juice with indigenous yeast. This is fermented as you would with a white wine, direct pressing without maceration and no skin contact. Fermentation in stainless steel tanks and finished in old clay underground amphoras for 6 months.
An attractive pale pink. Very refreshing pure fruit with citric flavours and a zinc minerality. Light fresh and delicate. This new 2021 is super tasty - a rosé with flavour if you like, cherry and berry with hints of orange citrus and spice.
