Fabulous sparkling wine made entirely from the local red Mando grape.
The colour is not from any pressing its just some natural bleeding of the juice during the natural fermentation.
Whilst the wine is still fermenting it goes into bottle. This is the most ancient form of sparkling wine known as the ancestral method. The wine sends over 30 months in the bottle before being disgorged. It's sparkling for sure but has quite a gentle fizz.
Its a wine i know well, drinking it regularly in Valencia. Full of cherry and wild strawberry fruit, hints of cranberry too. Plenty of flavour and character that's an attractive aperitif but works well with charcuterie and tapas as well. Lovely, proper artisanal fizz !
