A fascinating wine from the Canary Island of Tenerife. Ungrafted vines grown on volcanic soils.
The grapes were cooled to 5°C prior to vinification. Sulphur was not added, because at these temperatures oxidation takes place more slowly, which permits the winemakers to work without the use of additives. 85% was fermented with an indigenous yeast in stainless steel tanks, with 15% in concrete egg-shaped tanks at 16°C. The wine was aged on its lees adding complexity and texture.
Highly aromatic, intense and pure notes of passion fruit and fig tree leaves lead to an equally intense, bright palate with opulent fruit and a crisp, persistent finish, underpinned by smoky notes from the Tenerife terroir, minerally and properly interesting.
