Fabulous dry, unfortified Palomino from Andalucia. - in fact from some great vineyards in Jerez. Lovely intesity of fruit, not overlly fino in style like some of the unfortifieds, can imagine would be fabulous with some fried anchovies/sardines or salted cod for example. It was produced with Palomino grapes from 40- to 50-year-old vines on "barajuela" laminar albariza marl soils fermented mostly in stainless steel (80%) and only 20% in bota. It matured in stainless steel for six months.
"The 2024 El Muelle de Olaso is a wine that comes from all the plots that are treated with compost and therefore have more vigor and more life, and it extends the life of the plants and is rotated. So, this is a more immediate wine, with more fruit and subtler minerality, from the pagos of Macharnudo and Carrascal. It wants to showcase Palomino, Jerez and the albariza soils, which in a year like 2024 shows more agile and fresh, with 13% alcohol, with Jerez character even at this early stage, tasty, faintly salty.
