Fabulous, intense minerally white from the famous volcanic soils of the island of Santorini. Gaia are one of the leading wineries and are ultra consistent. The Wild Ferment is great but just a bit young right now, whilst i feel having drink a couple of bottles in Corfu in September that this is already showing well. Citrus fruit, hints of white peach with incredibly zesty acidity, limey and fresh yet with lots of extract and weight. Unsurprisingly great with all sorts of seafood and fish dishes. It's quite powerful so am sure would be really versatilel
