Salta, in Argentina's northwest, is home to some of the highest commercial vineyards on earth, with the Calchaquí Valley's Cafayate sub-region planted above 1,700 metres and running as high as 3,000. That altitude means intense sunlight and huge diurnal temperature swings, producing Torrontés — Argentina's signature aromatic white grape — in a particularly floral, vivid style, alongside deeply concentrated, structured Malbec.
