With a silky underlay of almond cream framing the bright-white citrus, it’s a wine that starts by lulling me with a slow, low hum of nonchalance. Then a cool prickle, a cool heat, like green Sichuan pepper, like fennel seeds. Then it’s cold green apple. Cobnuts. Chicory leaf. Fennel pollen. Beautiful rounded sweetness but very much shaped by an inner leaf-vein-like network of bitterness. Sommeliers, line up.
