"....from the same field blend as previous vintages, mostly Bobal with up to four other varieties (Moravia Agria, Rojas, Tortosí and Verdal), including 30% whites fermented with 50% full clusters and matured in clay tinaja (amphora). ....they filtered less and the wine is fresher. It comes from a cooler year; the vintage is always marked by the spring, which in 2021 was cool and the cycle started late. All the varieties were hand-picked simultaneously and transported to the winery where they were foot treaded. The grapes were cofermented using indigenous yeasts in stainless-steel, with 40% whole bunches adding lift and a short 8-10 day maceration adding structure. The wine was matured for 8 months in a mix of 1000 litre clay amphorae and stainless-steel tanks before bottling without fining or filtration.
This new 2022 really is a delicious wine, a notch up on the delicious 2021, aromatic and juicy, fresh with a lovely soft almost creamy finish. Serve cool and its wonderfully vibrant and great with a whole range of tapas dishes. Made by the extremely talented Javi Revert
