¼ of a solera, located in the most humid and airy part ofthe bodega. Bottled in June2021, after 8 years of ageing. 2500 bottles made.
Medium gold colour. Very intense and aromatically complex with salty tones and hints of honey, too. Aromas of toasted almonds, fresh yeast and intense yellow flowers, alongside dried camomille and apple rings. This Pasada has been aged for 8 years, giving the palate more nutty, oxidative flavours with honeycomb and some herbal undertones alongside toasted pinenuts, macadamia crunch and salty caramel. Really complex, layered and long. This is a fantastic offering from Lustau.
1996 AÑADA SHERRY, JEREZ DE LA FRONTERA
8 individual single casks made from a singular vintage. Bottled in June 2021. 2500 bottles made. 206g/l residual sugar.
Añada is a rare vintage sherry and this one comes from the 100th year anniversary of Lustau, aged for 25 years in ex-Oloroso casks in Lustau’s Jerez bodega. Moderate deep amber colour. Gorgeous lifted aromas of roasted pecans, toffee apple and walnut shell, alongside polished wood and sweet liquorice. Really fresh and juicy on the palate, with an unusually (for sherry!) vibrant acidity, giving flavours of Terry’s chocolate orange, clementine slices, caramel and soaked raisins. This acidity perfectly balances the 206g/l residual sugar and the oxidative flavours of long ageing. Delicious.
AMONTILLADO SOLERA DELCASTILLO, EL PUERTO DESANTA MARIA
1/20 solera, aged biologically for 4 years and oxidatively for 25 years (of which 17 were static). Bottled in June 2021. 2500 bottles made.
Gorgeous nose of warm forest honey, toasted cashew nuts, candied ginger and citrus. Very elegant with subtle hints of warm spices and polished wood. Complex and refined on the palate, still retaining the salty almond and candied citrus of biological ageing alongside more oxidative, nutty flavours reminiscent of honeycomb, orange chocolate, toasted hazelnut and nut butter. Very long on the aftertaste.
